SUPERMARKET RUN: Salmon & Red Snapper

Two beautiful pink, long fillets of fresh Salmon were $21.62, along with four fillets of fresh Pacific Red Snapper for $10.50 at the market today. Will likely bake the fish in foil as frying is out -- even with olive oil. Cost quite a bit, but the salmon was like buying a whole fish -- two sides. That's two meals for that alone and two more meals for the Red Snapper.

I also bought two pounds of bulk long grain brown rice @.49 cents per pound and two Winter acorn squash @.68 cents each. How to cook the acorn squash? There are several ways to prepare Acorn Squash, but all I do is cut them in half, scoop out the seeds, then sprinkle the insides with a little brown sugar, a slice of butter and a dash of cinnamon, then wrap them in foil and bake them at 350 degrees for a half-hour (poke them with a sharp knife -- if they're soft, they're done). I have fake zero cholesterol diet butter to use. The brown sugar is a problem, will likely use a teaspoon in each, no more, which will be OK. Acorn squash is a good source of potassium, B-vitamins and fiber. After it comes out of the oven, all you do is dig the orange squash out its shell with a spoon with your din-din. My stupid roommate won't eat them. Whatever, I don't give a shit. He can go hungry and malnourished. I don't like people who have narrow, closed minds who refuse to try new ways of doing things. The acorn squash are good and taste like pumpkin pie baked my way.

In my experience with brown rice, I've found that it HAS to be baked in a covered casserole dish to come out right (too chewy cooked on the stove or in my Rice Cooker). Some people cook it in a cast iron skillet on the stove top, but I've tried that and it just takes too long to cook and always comes out chewy. Seems the only way I can make it taste fluffy and light like white rice is to bake it. I add two cups of 98% fat free chicken stock to it instead of plain water which gives it a palatable flavor. Brown rice is much more nutritious than white rice. Just look at the all the vitamins in it on this nutrition chart!

Really dull diet cooking, but it's all very nutritious. It's not cheap eating good food and the evil stores know this and charge people who want to be healthy big money. It's a very bad scenario. It all cost me quite a bit of money, but it will yield several meals.

That's all I have today. I've been feeling ill today, with a massive headache and have been sweating throughout the day -- even though the temperature here is mild. Might be fighting something off, I don't know. Just feel lousy all over. Hope it's not Swine Flu, tee-hee. As a result I didn't go out for my desert walk on all the trails surrounding this place -- will do that tomorrow. There is much more to see than in my first desert trail movie, so I will take the video camera along to show you more. Walking in the store was enough exercise, especially dodging all the people there pushing their carts around blindly, like maniacs. A lot of fucked up, malfunctioning brains out there. I get real tired of it all. I had to keep moving as there was always somebody behind me on my heels. Real aggravating. I am getting older and I like to take my fucking sweet time doing things -- not rushing around like a lunatic. There's no reason for that. Now I don't move like a turtle, but every time I turned around there was some sonofabitch on my tail. I'm glad I took an anxiety pill before I went to the market.

So tomorrow there will be a home movie if I recover from whatever ails me. I want to get film of the area while the weather is still nice before the snow season hits. But then again, tramping the trails in the snow might be a kind of adventure in itself. We'll soon see as time is passing rapidly.
